Red Velvet Cupcakes



Today I made some Red Velvet cupcakes with a cream cheese frosting. Yes, I like cooking.. well sometimes if I feel like it. I made the cupcakes one time with a good friend and I like the recipe since it's easy and it tastes really good.  For the Red Velvet cupcakes I used the recipe of Laura in the Kitchen (famous on Youtube). 


The ingredients for the cupcakes:

1 ¼ cup of all Purpose Flour
2 Tbsp of Cocoa Powder
½ tsp of Baking Powder
½ tsp of Baking Soda
¼ tsp of Salt
¼ cup of Unsalted Butter at room temperature
¾ cup of Granulated sugar
¾ cup of Buttermilk
1 Egg
1 tsp of Vanilla Extract
Red food Coloring (powder or liquid)



First, pre-heat the oven to 175 Celsius and prepare the cupcake baking cups. It's easier to start with weighing all the ingredients before mixing it. Put the ingredients in separate plates and bowls; except for the first five dry (flour, cocao, baking powder, baking soda and salt) ingredients. Put the first five dry ingredients together in a strainer, to prevent lumps in the dough later on, and set it aside on a plate. 







Now you can start mixing the suger and butter together. When it's well mixed, you can add the vanilla extract, the egg and mix it throughly. Now take the plate with the five dry ingredients and gently mix it together with a spoon so it is already mixed when you add it it to the butter, egg and vanilla mixture. After that. add half of the buttermilk and half of the dry ingedrients to the mixture and mix it throughly. Now add the rest of the buttermilk and the dry ingredients to the mixture. Don't overmix it!



Lastly add the red foodcoloring and mix it with a spoon. Add as much as you need. If you use dark cacao powder, then add a bit more food coloring.












Now put the dough in the cupcake baking cups with two spoons or a ice cream scoop, and put it in the oven for about 15 to 25 minutes. 
You need to keep checking on the cupcakes after 15 minutes. By using a toothpick, you can check whether the cupcakes are ready or not. If the tooth pick comes out clean, then they are ready. 








For the Red Velvet cupcakes, I used a cream cheese frosting. The ingredients are:

1 Cups of Powdered Sugar
100 grams of Monchou, softened at room temperature 

You just have to mix it all together and add a bit more/less sugar. Then put it on the cupcakes with an icing bag after it is cooled down, and leave it in the fridge for 15 minutes. Then it's ready to serve!
